Food: Home-made Mee Hoon Kueh


This is my wife's first attempt in preparing and cooking the mee-hoon kueh. It's a hand-pulled noodles in ikan bilis (anchovies) soup broth. Getting the recipe from her mum, she starts preparing the dough with the help of our little mischiefs who wants to be a part of mommy's helper in the kitchen.




Here they are 'helping' mommy in her dough preparation for the mee-hoon kueh. Well actually, they are making a mess more than helping. Hahaha ... But then that's children. They started to shape the dough into shapes of cars and animals. Psssttt ... their dough was not used for cooking.

After enjoying themselves, I ushered them to the bathroom and showered them while my wife continue with her cooking.

Ahh ... delicious mee-hoon kueh

Recipe for Mee-Hoon Kueh

Dough
    500gm plain flour
    200ml water
    1 egg, lightly beaten
    1 tsp salt


Method
    Mix flour, egg and salt in a large mixing bowl.
    Slowly add in water and knead till dough is smooth.
    Let the dough rest for at least 1 hour or more.


Ikan Bilis (Anchovy) Soup Base
    100gm ikan bilis washed thoroughly
    2L water
    salt to taste


Method
    Place ikan bilis in water and bring to boil.
    Lower heat and simmer for 45mins.
    Add salt to taste.


 Garnishing
    Leafy vegetables
    Eggs
    Fishcake (optional)
    Sesame oil
    Fried ikan bilis
    Fried shallots


To cook:
Bring soup to boil in a pot with fishcake
Tear dough into small thin pieces and drop into soup
Let it cook for 1 min and add in egg and vegetables
Remove from heat and garnish with fried shallots and ikan bilis
